If you like piña coladas…and getting caught in the rain!
One of my favorite types of drinks are frozen drinks! It’s like a little happy dance in a cup! At Starbucks, I like to indulge in their frappuccinos or smoothies. Something about that velvety, cool feeling! When I did the Whole 30, I had smoothies for breakfast and for dessert. It’s so fun to be creative while making something yummy!
This past week I was craving something with coconut and a piña colada popped into my head. I haven’t had a good piña colada since forever, but this drink would be perfect to sip pool side. Or just because! You deserve it, mama! Not pregnant? Add a shot or 4 of Malibu Rum. Whatever floats your boat!

Virgin Piña Colada
When I first concocted this mocktail, I put a cup of ice, some pineapple chunks with pineapple juice and a squirt of cream of coconut. Although delicious, my measurements were off and it ended up tasting like a sugar overload of pineapple juice. So I used Pinterest to find a recipe that was similar and found one that was identical with measurements!
With that said, the below recipe is a replica from Sweet Sunny Days. (I adjusted measurements to my taste.)
Ingredients
- 4 Pineapple Slices
- 1/2 cup pineapple juice
- 2 oz cream of coconut
- 2 cups ice
Add all ingredients into your blender and blend until smooth. Add pineapple or umbrella to garnish and serve immediately! Cheers!
